About Us

Caribbean cooking is a fusion of British, Dutch, French, Spanish, East Indian, West African, Portuguese, and Chinese cuisine. Because of this grand mingling of traditions, Caribbean dishes are uniquely seasoned with a "little bit of this and a little bit of that". We like to describe Caribbean food as a kind of calypso culinary medley, that is vibrant and exciting.

About the Restaurant
Casuelita's Caribbean Cafe is a two-story restaurant located in the northend of Belltown Seattle on First and Western. We are a small and cozy restaurant hidden away from all the hustle and bust of downtown Seattle. Our friendly staff awaits you

Our dining room is located on the top level floor so you experience a more intimate and Caribbean-like ambience. While dining, you also have an exceptional view of the Puget Sound.

About the Chef
Richard DwyerChef Richard T. Dwyer has over 15 years experience in the culinary arts and the restaurant industry. Throughout his career in the culinary arts, Richard has worked for several restaurants in the Portland, Oregon area to the Seattle, WA area. This includes working for the Red Lion Hilton Hotel, the Marriott Hotel, the Seattle Space Needle and Latitude 47°.

Richard then took his culinary skills to the Caribbean Islands and quickly integrated his knowledge with well-known dishes of the isle - dishes from Montego Bay, Jamaica to Bridgetown, Barbados.

In 1999, Richard came back to Seattle and started Casuelita's Caribbean Cafe. Up until now Richard has attracted many customers to this corner restaurant with his flavorful recipes and exquisite choice of rums.
